  • 1/2 tsp Ground Nutmeg (Could use allspice as a substitute)
  • 1/2 tsp Ground Cinnamon (Can replace with pumpkin spice for a different flavor profile)
  • 75 g Muscovado Sugar (Brown sugar can be used as a substitute)
  • 1 Orange Zest and Juice (From 1 orange; lemon could be an alternative)
  • 1 tsp Vanilla Paste or Essence (Almond extract works as a good substitute)
  • 175 g Plain Flour (sifted) (Gluten-free flour mix can be used)
  • 1 tsp Baking Powder (Ensure it’s fresh for best results)
  • 75 g Suet Mix (Vegetarian suet or replace with butter)
  • pinch Sea-salt Flakes (Use kosher salt if unavailable)
  • 1/3 cup Malt Extract or Golden Syrup (Sweetness and moisture)
  • 2/3 cup Malt Extract or Golden Syrup (For the caramel sauce; honey can be used for a different flavor)
  • 25 g Unsalted Butter (For the caramel sauce; could replace with coconut oil for a dairy-free version)

Instructions

  1. Grease an 850ml microwave-safe pudding bowl with melted butter.
  2. Whisk together milk, egg, ground spices, muscovado sugar, orange zest, juice, and vanilla until smooth.
  3. Fold in sifted flour and baking powder, then add suet and a pinch of sea-salt flakes.
  4. Swirl half of the malt extract or golden syrup to coat the bowl’s sides, pour in the pudding mixture, drizzling remaining syrup on top.
  5. Cover with a lid or damp paper, microwave on HIGH for 5–7 minutes until cooked through.
  6. For the caramel sauce, heat remaining malt extract or syrup until hot, whisk in butter until melted, adding a pinch of salt.
  7. Invert pudding onto a plate, drizzle warm caramel sauce over it, and serve with whipped cream or vanilla ice cream.
  8. Optional: Garnish with a sprinkle of orange zest.
