- 12 store-bought potstickers
- 1 can (13.5 oz) full-fat coconut milk
- 4 cups vegetable broth
- 2 tbsp fresh ginger, grated
- 4 green onions, sliced
- 4 cloves garlic, minced
- 3 tbsp low-sodium soy sauce
- 2 tbsp fresh lime juice
- 1 tsp chili flakes (optional)
Instructions
- In a large pot over medium heat, sauté minced garlic and grated ginger for about one minute until fragrant.
- Add the coconut milk and vegetable broth; whisk together until smooth.
- Stir in soy sauce and lime juice. For added spice, sprinkle in chili flakes.
- Gently add potstickers to the bubbling broth and simmer for 5-7 minutes until cooked through.
- Just before serving, mix in sliced green onions. Ladle into bowls and garnish with extra green onions if desired.
