- 2 tbsp Curry powder
- 3 cloves Garlic
- 1 can Coconut milk
- 1 cup Rice
- 1 cup Bell peppers
- 1 cup Peas
- 1 cup Fresh cilantro
- 1 cup Toasted coconut
Instructions
- Season the chicken thighs generously with spices, including curry powder and minced garlic. Brown them in a large skillet over medium heat until cooked through, about 5-7 minutes per side.
- In a separate pot, combine the rice and coconut milk. Bring to a gentle simmer over medium heat, then cover and let cook for about 15-20 minutes until the rice is fluffy and has absorbed the coconut milk.
- Once the chicken is done, slice it into bite-sized pieces and fold it gently into the cooked rice. Allow the chicken and rice to sit together for a few moments to meld flavors.
- Plate the creamy coconut chicken and rice, garnishing with fresh cilantro and a sprinkle of toasted coconut. Enjoy!
