  • 1 tsp Black Pepper
  • 1 tsp Ground Cumin
  • 2 tbsp Ají Amarillo Paste
  • 1 medium Yellow Onion, chopped
  • 3 cloves Garlic, minced
  • 1 cup Chicken Broth
  • 1 cup Heavy Cream/Evaporated Milk
  • 1 tbsp Sugar (Optional)
  • 1/4 cup Fresh Cilantro, chopped

Instructions

  1. Rub chicken with salt and pepper. Let rest for 10 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, sauté chopped yellow onion until translucent (about 5 minutes). Add minced garlic and ground cumin, stirring until fragrant (about 1 minute).
  4. Mix in ají amarillo paste and simmer for 2 minutes. Gradually stir in chicken broth, scraping the skillet bottom. Bring to a gentle simmer.
  5. Stir in heavy cream or evaporated milk, simmering until smooth and slightly thickened.
  6. Return seared chicken to the skillet, spoon sauce over it, and simmer for 5 minutes.
