- 1 lb Chicken Thighs/Breasts
- 2 tbsp Olive Oil
- 1 tsp Salt
- 1 tsp Black Pepper
- 1 tsp Ground Cumin
- 2 tbsp Ají Amarillo Paste
- 1 medium Yellow Onion, chopped
- 3 cloves Garlic, minced
- 1 cup Chicken Broth
- 1 cup Heavy Cream/Evaporated Milk
- 1 tbsp Sugar (Optional)
- 1/4 cup Fresh Cilantro, chopped
Instructions
- Rub chicken with salt and pepper. Let rest for 10 minutes.
- Heat olive oil in a skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown and cooked through. Remove and set aside.
- In the same skillet, sauté chopped yellow onion until translucent (about 5 minutes). Add minced garlic and ground cumin, stirring until fragrant (about 1 minute).
- Mix in ají amarillo paste and simmer for 2 minutes. Gradually stir in chicken broth, scraping the skillet bottom. Bring to a gentle simmer.
- Stir in heavy cream or evaporated milk, simmering until smooth and slightly thickened.
- Return seared chicken to the skillet, spoon sauce over it, and simmer for 5 minutes.
- Taste and adjust seasoning. Garnish with cilantro and serve hot with rice, quinoa, or fried plantains.
