  • 1 cup chopped onion

  • 1 pound ground beef
  • 1 cup beef broth
  • 2 (16 oz) cans kidney beans, rinsed
  • 1 (16 oz) can petite diced tomatoes, drained
  • 1 (8 oz) can tomato sauce
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon oregano
  • ½ tablespoon red cayenne pepper (optional)
  • Salt and pepper to taste
  • 2 pounds russet potatoes
  • Cooking oil spray
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • 2 cups shredded cheddar cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion, red and green peppers, and minced garlic. Sauté until vegetables are tender, about 5-7 minutes.
  2. Brown the ground beef in the pot. Stir frequently until it’s cooked through and no longer pink, about 7-10 minutes.
  3. Combine the beef broth, kidney beans, drained diced tomatoes, tomato sauce, chili powder, cumin, oregano, and cayenne pepper in the pot. Bring the mixture to a boil, then reduce the heat to let it simmer.
  4. Simmer the chili for about 30 minutes, stirring occasionally. Season with salt and pepper to taste before serving.
  5. Prepare your fries by preheating the oven to 425°F. Cut the russet potatoes into thick fries, spray them with cooking oil, and season with smoked paprika, garlic powder, and a pinch of salt.
  6. Bake the fries for 25-30 minutes, flipping them halfway through until they are crispy and golden-brown.
  7. Serve the chili hot with a generous sprinkle of shredded cheddar cheese on top, alongside your crispy fries.
