- 1 cup chopped onion

- 1 cup beef broth
- 2 (16 oz) cans kidney beans, rinsed
- 1 (16 oz) can petite diced tomatoes, drained
- 1 (8 oz) can tomato sauce
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon oregano
- ½ tablespoon red cayenne pepper (optional)
- Salt and pepper to taste
- 2 pounds russet potatoes
- Cooking oil spray
- ½ teaspoon smoked paprika
- ½ teaspoon garlic powder
- 2 cups shredded cheddar cheese
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion, red and green peppers, and minced garlic. Sauté until vegetables are tender, about 5-7 minutes.
- Brown the ground beef in the pot. Stir frequently until it’s cooked through and no longer pink, about 7-10 minutes.
- Combine the beef broth, kidney beans, drained diced tomatoes, tomato sauce, chili powder, cumin, oregano, and cayenne pepper in the pot. Bring the mixture to a boil, then reduce the heat to let it simmer.
- Simmer the chili for about 30 minutes, stirring occasionally. Season with salt and pepper to taste before serving.
- Prepare your fries by preheating the oven to 425°F. Cut the russet potatoes into thick fries, spray them with cooking oil, and season with smoked paprika, garlic powder, and a pinch of salt.
- Bake the fries for 25-30 minutes, flipping them halfway through until they are crispy and golden-brown.
- Serve the chili hot with a generous sprinkle of shredded cheddar cheese on top, alongside your crispy fries.

- Optional: For an extra kick, sprinkle some sliced jalapeños on top before serving.
