Ingredients

  • 1 pound chicken breast, sliced
  • 2 medium zucchinis, sliced
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper
  • 1 tablespoon cornstarch

Instructions

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add sliced chicken and cook until browned and cooked through.
  3. Remove chicken from skillet and set aside.
  4. Add zucchini, bell pepper, and garlic to the skillet, stir-fry for about 5 minutes.
  5. Return chicken to the skillet.
  6. In a small bowl, whisk together soy sauce, sesame oil, black pepper, and cornstarch.
  7. Pour the sauce over the chicken and vegetables, cook for an additional 2-3 minutes until sauce thickens.
  8. Serve warm.
