Ingredients

  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup water
  • 1/2 cup milk
  • 2 tbsp butter, melted
  • 1/4 tsp salt
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 cups cooked chicken, shredded
  • 2 cups fresh spinach
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1/2 cup cream cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Whisk flour, eggs, milk, water, melted butter, and salt until smooth. Let batter rest for at least 30 minutes.
  2. Heat a lightly greased nonstick skillet over medium heat. Pour about 1/4 cup batter, swirl to coat, and cook 1–2 minutes per side until lightly golden. Set aside.
  3. Heat olive oil in a pan and sauté onion until soft. Add garlic and cook 1 minute. Stir in chicken, spinach, salt, and pepper; cook until spinach wilts.
  4. Stir in cream cheese and Parmesan until smooth and creamy.
  5. Spoon filling into each crêpe, roll or fold, and place seam-side down. Garnish with extra Parmesan or herbs if desired.
