- 1 cup all-purpose flour
- 2 eggs
- 1/2 cup water
- 1/2 cup milk
- 2 tbsp butter, melted
- 1/4 tsp salt
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 cups cooked chicken, shredded
- 2 cups fresh spinach
- 1/4 tsp black pepper
- 1/2 tsp salt
- 1/2 cup cream cheese
- 1/4 cup grated Parmesan cheese
Instructions
- Whisk flour, eggs, milk, water, melted butter, and salt until smooth. Let batter rest for at least 30 minutes.
- Heat a lightly greased nonstick skillet over medium heat. Pour about 1/4 cup batter, swirl to coat, and cook 1–2 minutes per side until lightly golden. Set aside.
- Heat olive oil in a pan and sauté onion until soft. Add garlic and cook 1 minute. Stir in chicken, spinach, salt, and pepper; cook until spinach wilts.
- Stir in cream cheese and Parmesan until smooth and creamy.
- Spoon filling into each crêpe, roll or fold, and place seam-side down. Garnish with extra Parmesan or herbs if desired.
