Hearty Cheddar and Herb Soda Bread for Cozy Winter Nights
Ingredients
Scale
- 4 cups All-Purpose Flour (substitute with whole wheat flour for a denser texture)
- 1 tsp Baking Soda (double-check it’s fresh for the best rise)

- ½ cup Fresh Chives (can swap with green onions or skip)
- 1 tbsp Fresh Thyme (or use dried herbs (reduce total by 1 tsp))
- 1 tbsp Fresh Rosemary (or use dried herbs (reduce total by 1 tsp))
- 1 tbsp Fresh Sage (or use dried herbs (reduce total by 1 tsp))
- 1 cup Cheddar Cheese (try Gruyère or Monterey Jack for a twist)
- 1½ cups Buttermilk (can replace with milk mixed with lemon juice or vinegar)
Instructions
- Preheat your oven to 425°F (218°C) to create the perfect environment for baking.
- Whisk together flour, baking soda, and salt in a large mixing bowl.
- Mix in the chopped herbs and shredded cheddar cheese until evenly distributed.
- Add buttermilk, stirring gently until the dough just comes together.

- Shape it into a smooth ball and pat down into a 7-inch circle.
- Transfer the dough to a floured baking sheet and score a cross into the top.

- Cool wrapped in a tea towel to soften the crust.
