Description
Delightful Cardamom Shortbread Cookies with Orange Glaze, perfect for tea time indulgence.
Ingredients
Scale
- 2 cups all-purpose flour (substitute with gluten-free flour for a gluten-free version)
- 1 teaspoon ground cardamom (can be replaced with cinnamon or nutmeg)
- 1/2 teaspoon salt
- 1 cup unsalted butter (ensure it’s softened)
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon fresh orange zest
- 2 tablespoons fresh orange juice
- 1 cup powdered sugar (adjust for desired consistency)
- 2 tablespoons fresh orange juice
- 1 teaspoon fresh orange zest
Instructions
- In a medium bowl, whisk together all-purpose flour, ground cardamom, and salt. In a large mixing bowl, beat softened unsalted butter and powdered sugar until creamy and light. Stir in vanilla extract and orange zest before gradually adding the flour mixture until just combined.
- Shape the dough into a disk and wrap it in plastic wrap. Refrigerate for at least 1 hour to firm up.
- Preheat your oven to 350°F (175°C). On a floured surface, roll out the chilled dough to a ¼-inch thickness. Use cookie cutters to cut out desired shapes and arrange them on a parchment-lined baking sheet. Bake for 12-15 minutes.
- In a small bowl, whisk together powdered sugar, fresh orange juice, and zest until smooth. Adjust the consistency by adding more juice or sugar as needed.
- Once the cookies are completely cool, drizzle the glaze over them and allow it to set before serving.
