- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ teaspoon ground cinnamon
- ¼ cup unsalted butter, melted
- 2 cups ricotta cheese (drained)
- 1 cup mascarpone cheese
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest (optional)
- ½ cup mini chocolate chips
- ¼ cup chopped pistachios (optional, for garnish)
Instructions
- Preheat oven to 350°F (175°C). In a medium mixing bowl, combine the graham cracker crumbs, sugar, and cinnamon. Add the melted butter and stir until evenly combined and crumbly. Press into the bottom of a 9×9-inch square baking dish. Bake for about 10 minutes, then cool.
- In a large mixing bowl, combine ricotta cheese, mascarpone cheese, powdered sugar, vanilla extract, and lemon zest (if using). Beat on medium speed until smooth and creamy. Fold in mini chocolate chips gently, saving some for topping.
- Spread the ricotta mixture evenly over the cooled crust. Smooth the top with a spatula. Sprinkle remaining chocolate chips and chopped pistachios (if using) on top. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight.
- After chilling, cut into squares and serve. They are perfect for sharing and look great on an Italian dessert tray.
