California Crunch Roll Sushi is a delightful homemade sushi experience that combines creamy avocado, crunchy cucumber, and a crispy topping.

- 1 cup Sushi Rice
- 2 sheets Nori Sheets
- 8 oz Imitation Crab (or Real Crab)
- 1 piece Avocado
- 1 piece Cucumber
- 2 tbsp Spicy Mayo
- 2 tbsp Eel Sauce
- ¼ cup Crunchy Topping
Instructions
- Rinse 1 cup of sushi rice until the water runs clear. Cook the rice with 1¼ cups of water until tender. Fold in a mixture of 2 tbsp rice vinegar, 1 tbsp sugar, and ½ tsp salt into the warm rice and let it cool completely.
- Wrap your bamboo sushi mat in plastic wrap for cleanliness. Prepare a small bowl of vinegar-water to prevent sticking while rolling.
- Place a sheet of nori on the sushi mat, shiny side down. Spread cooled rice evenly, leaving a ½ inch gap at the top. Flip the nori so rice side faces down. Layer fillings in the center.
- Firmly grasp the mat edge and roll tightly away from you, tucking fillings in. Seal the edge with water to stick.
- Brush the roll lightly with spicy mayo or eel sauce, then sprinkle on crunchy topping and press down gently.
- Slice the roll into 8 pieces with a sharp, damp knife. Serve with soy sauce, pickled ginger, and wasabi.

- Can replace sushi rice with brown rice for a healthier option.
