Description
This Bold Flavor-Packed Coleslaw is crunchy, colorful, and tossed in a creamy tangy dressing with Dijon, apple cider vinegar, and celery seed. It’s the perfect summer side for BBQs, burgers, sandwiches, or meal prep.

- 6 cups shredded green cabbage
- 2 cups shredded red cabbage
- 2 medium carrots, peeled into thin strips or shredded
- 3 scallions, chopped
- Scant 3/4 cup mayonnaise (or vegan mayo)
- 2 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1 tbsp pure maple syrup (or honey)
- 3/4 tsp celery seeds
- 1/4 tsp sea salt
- Freshly ground black pepper, to taste
Instructions
- In a large bowl, add green cabbage, red cabbage, carrots, and scallions. Toss to mix.
- In a small bowl, whisk mayo, apple cider vinegar, Dijon mustard, maple syrup, celery seeds, salt, and black pepper until smooth.
- Pour dressing over the veggies and toss until everything is evenly coated.
- Taste and add more salt/pepper if needed.
- Cover and refrigerate for at least 30 minutes before serving for the best flavor.
