Description

This Bold Flavor-Packed Coleslaw is crunchy, colorful, and tossed in a creamy tangy dressing with Dijon, apple cider vinegar, and celery seed. It’s the perfect summer side for BBQs, burgers, sandwiches, or meal prep.


Ingredients

  • 6 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 2 medium carrots, peeled into thin strips or shredded
  • 3 scallions, chopped
  • Scant 3/4 cup mayonnaise (or vegan mayo)
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp pure maple syrup (or honey)
  • 3/4 tsp celery seeds
  • 1/4 tsp sea salt
  • Freshly ground black pepper, to taste

Instructions

  1. In a large bowl, add green cabbage, red cabbage, carrots, and scallions. Toss to mix.
  2. In a small bowl, whisk mayo, apple cider vinegar, Dijon mustard, maple syrup, celery seeds, salt, and black pepper until smooth.
  3. Pour dressing over the veggies and toss until everything is evenly coated.
  4. Taste and add more salt/pepper if needed.
  5. Cover and refrigerate for at least 30 minutes before serving for the best flavor.
