Ingredients

  • 1 cup Heavy Cream (Opt for half-and-half for a lighter version)
  • 1 cup White Chocolate Chips (Can be swapped with dark chocolate for a richer flavor)

Instructions

  1. In a mixing bowl, combine the all-purpose flour, powdered sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Blend in the egg yolks and vanilla extract until a smooth dough forms. Refrigerate for at least 1 hour.
  2. Roll the chilled dough to about 1/4 inch thick. Fit the dough into tart tins, trimming any excess. Puncture the base with a fork, then weigh it down with foil and pie weights. Bake in a preheated oven at 350°F for 10 minutes, remove the weights, and bake for another 10 minutes until golden.
  3. In a small saucepan, heat the heavy cream just until it simmers. Pour the hot cream over the white chocolate chips in a bowl and stir until smooth.
  4. Mash fresh blueberries into the ganache mixture with a fork, adjusting the amount based on your taste.
  5. Pour the ganache into the cooled tart shells, spreading it evenly. Freeze for a few hours or preferably overnight.
  6. Dust the top of the tart with powdered sugar. Slice into wedges and enjoy!
