Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 pinch salt
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter (cold, cut into small pieces)
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1/2 cup raspberry jam
  • 23 cups fresh cherries (pitted and halved)
  • 1 cup heavy cream
  • 1/4 cup sour cream or cream cheese
  • 2 tablespoons powdered sugar
  • 8 whole cherries (for decoration)
  • 1 tablespoon chocolate shavings

Instructions

  1. In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, salt, and powdered sugar until well combined.
  2. Add the cold, small pieces of unsalted butter to the dry mixture and work in until it resembles coarse crumbs.
  3. Stir in the egg yolk and vanilla extract. Gradually add ice water until the dough starts to come together.
  4. Roll out the dough on a lightly floured surface and press it into a tart pan. Chill for 30 minutes.
  5. Preheat your oven to 350°F (175°C) and bake the chilled crust for 15-20 minutes until firm and crisp. Let it cool completely.
  6. Spread raspberry jam over the cooled crust.
  7. Arrange the pitted and halved fresh cherries on top of the jam.
  8. Whip heavy cream, sour cream, and powdered sugar until soft peaks form and top the cherries.
  9. Garnish with whole cherries and chocolate shavings before serving.
