- 1/4 cup Parmesan Cheese (freshly grated) (Shredded mozzarella can be used)
- 1/2 tsp Lemon Zest (Mashed capers can be an alternative)
- Fresh Parsley (For garnish)
- Non-Stick Cooking Spray (Parchment paper is a great alternative)
Instructions
- Preheat your oven to 450°F (232°C) and generously grease your baking pan with non-stick cooking spray.
- Pat the skin-on salmon fillets dry with a paper towel, then season both sides with salt and pepper.
- In a mixing bowl, combine mayonnaise, lemon zest, salt, and black pepper.
- Place the salmon fillets skin-side down in the greased baking pan. Spread the mayo mixture evenly over the top of each fillet.
- Sprinkle the freshly grated Parmesan cheese generously over the mayo topping.
- Bake the salmon in the preheated oven for about 8 minutes, or until it reaches an internal temperature of 145°F (63°C).
- Once baked, remove the salmon from the oven and garnish with fresh parsley before serving.
