- 3 cups sugar

- 0.75 cup 7UP soda
- 1.5 cups confectioners’ sugar
- 1 tablespoon lemon or lime juice
- 1–2 tablespoons 7UP soda
- 0.5 teaspoon grated lemon or lime zest (optional)
Instructions
- Preheat the oven to 350°F.
- Cream the butter and sugar in a large bowl until light and fluffy, about 3-5 minutes.
- Incorporate the eggs one at a time, mixing well after each addition. Stir in the lemon juice and vanilla extract.
- Gradually add the flour, mixing until just combined.
- Pour in the 7UP soda and gently stir until the batter is smooth and well-combined.
- Transfer the batter into a prepared baking dish and smooth the top. Bake for about 50-60 minutes.
- For the Glaze: whisk together the confectioners’ sugar, lemon or lime juice, and enough 7UP soda until reaching desired consistency.
- Drizzle the glaze over the cooled cake. Optional: sprinkle with grated zest.
