This Lemon 7UP Pound Cake is a delightful dessert that combines zesty lemon flavor with the effervescence of 7UP, creating a light and fluffy treat.


Ingredients

  • 3 cups sugar

  • 2 tablespoons lemon juice

  • 0.75 cup 7UP soda
  • 1.5 cups confectioners’ sugar
  • 1 tablespoon lemon or lime juice
  • 12 tablespoons 7UP soda
  • 0.5 teaspoon grated lemon or lime zest (optional)

Instructions

  1. Preheat the oven to 350°F.
  2. Cream the butter and sugar in a large bowl until light and fluffy, about 3-5 minutes.
  3. Incorporate the eggs one at a time, mixing well after each addition. Stir in the lemon juice and vanilla extract.
  4. Gradually add the flour, mixing until just combined.
  5. Pour in the 7UP soda and gently stir until the batter is smooth and well-combined.
  6. Transfer the batter into a prepared baking dish and smooth the top. Bake for about 50-60 minutes.
  7. For the Glaze: whisk together the confectioners’ sugar, lemon or lime juice, and enough 7UP soda until reaching desired consistency.
  8. Drizzle the glaze over the cooled cake. Optional: sprinkle with grated zest.
